- 1 tablespoon sesame oil
- 12 ounces boneless, skinless chicken breast diced
- 1/2 cup white onion diced
- 2 carrots peeled and diced
- 1/4 cup soy sauce divided
- 3-4 cup white rice cooked
- 3 tablspoons garlic butter
- 2 large eggs beaten
- 2 stalks scallions diced
Heat the sesame oil in a large skillet over medium-high heat.
Add the chicken and sauté until it begins to brown.
Stir in onion, carrots, and 2 tablespoons of the soy sauce and sauté until the vegetables begin to soften.
Reduce heat to medium. Stir in the cooked rice, garlic butter, and remaining 2 tablespoons of the soy sauce. Sauté 3 minutes.
Move the rice to the sides of the pan to create an opening in the center. Pour in the beaten eggs and let cook 2 minutes without stirring. Once the eggs begin to set, scramble them in the center of the pan and then fold the scrambled eggs into the rice.
Stir in chopped scallions before serving.
